‘Big Fat Surprise’ author criticizes dietary guidelines
The author of the New York Times bestseller The Big Fat Surprise says red meat has been unfairly blamed for the increases in obesity, diabetes and heart disease among Americans.
In an exclusive interview with Brownfield, Nina Teicholz says recommendations to consume less red meat, such as those contained in the government’s dietary guidelines, are actually contributing to those epidemics. And Teicholz agrees with many in the livestock and meat industries that “sustainability” has no place in those dietary recommendations.
Teicholz spoke at the recent American Meat Science Association conference in Lincoln.
