Carrots pack a super nutritious punch

Researchers from North Carolina State and the University of Wisconsin-Madison have been sequencing 630 carrot genomes as they examine the history of the orange carrot.  Carrots, especially orange carrots contain high quantities of carotenoids, which can help reduce the risk of diseases like eye disease. 

The orange carrot is the most abundant plant source of pro-vitamin A in the American diet.
