Butter jumps 16 cents

The butter market taking a big jump on Thursday on reports of limited bulk butter available in the Central U.S.  Demand is strong in both retail and food service and most manufacturers say they are in a butterfat-deficit situation.  Some butter makers are still selling cream to ice cream and cream cheese makers.  Maintenance projects at some butter-making facilities in the Northeast have reduced production in the region.  Reports are butter is selling for up to 6 cents over the CME price.

The cooler weather is causing milk production to hold steady in the Central, Northeast and Mid-Atlantic Regions.  Southeast production has increased slightly except Florida where 6 inches of rain over the last few days has made for very soggy conditions.  80 loads of milk were shipped into Florida this week.

Weekly dairy cow slaughter for the week ending July 26th was 56,000 down 4,600 head from the same week a year ago.

Ken Heiman has a cheese plant and also a dairy farm in Wisconsin, he credits the strong demand to a combination of slowly turning consumer opinion from anti-dairy to pro-dairy and a 20-plus year investment in creating new uses for milk.
