So, about that Gluten…
Jordan Stillmock, a dietetics and nutrition grad student at the University of Nebraska-Lincoln, explains what gluten is in this Healthy Living program. She says people with Celiac disease – a disease of the intestines – have to eat foods that are free of gluten. For others, they may be gluten sensitive and feel better not eating gluten. For others, they think it’s a way to lose weight. But Stillmock says you could short-change yourself on nutrients and consume excessive calories by following that diet unnecessarily.
