Nebraska cattle producer encourages smart food practices on Earth Day

An Eastern Nebraska cattle producer says Earth Day is a reminder for both consumers and producers to understand their impact on the planet through food consumption.

Joan Ruskamp of Dodge says one problem is food waste. “Forty-percent of all food that we eat is wasted and that’s something every sing person can look at, even cutting that in half,” she says.

She tells Brownfield one solution is to take home leftovers when eating out. “It’s not embarrassing to take home food that you can’t eat or split a meal with someone. Let’s all try to cut our food waste and celebrate our planet by all of us pitching in to do our part,” she said.

Ruskamp and her husband have a feedlot for 3,000 head, while growing corn and soybeans.
