Dairy product production continues downward trend

Dairy product production was mostly lower during November with Italian cheese driving the largest category.

Total cheese production was 1.12 billion pounds, up nearly two percent on the year but down almost three percent from the prior month. Italian cheese production was up more than six percent on the year and down about one percent on the month while American cheese was down nearly three percent on the year and five percent from October.

Butter production totaled 156 million pounds, down nearly 10 percent from the prior year and three percent from last month.

Nonfat dry milk was down 15 percent from 2020 and skim milk powder was down 24.5 percent.  Dry whey production was up nearly nine percent while lactose was up eight percent from the previous year.
