Dairy evolving with consumer preferences

The CEO of Midwest Dairy says the industry is doing a good job keeping up with the wants and needs of consumers.

Lucas Lentsch tells Brownfield preferences are robust and ever-changing.

“It isn’t so much about trying to manage change or control it, it’s just trying to evolve with it.”

He says dairy is adapting to a new normal.

“Figuring out not just all dairy, but how does dairy particularly play in this world of and/or in terms of ingredients. How to make that sure dairy proteins are the center of the conversation versus alternatives. That’s the fight that we’re in.”

But Lentsch says it doesn’t have to be a fight, and hopes dairy will lead the conversation instead of defending a position.
