Fat means flavor – but can it be healthy?

In general we know that cooking with fats generally means a flavorful meal.  But how does that happen? David Joachim, a James Beard Award winning chef says the fats trigger the salivary glands – and that signals our bodies that something tastes good.  In addition, Joachim tells Brownfields we don’t have to stop using fats when cooking.  In fact – he says he loves cooking with fats.
