Summer veggies – skin on or off – they’re good for you
Summer fruits and vegetables are coming into season at a local farm stands farmers markets and in select grocery stores in the Midwest this June, July and August. Let’s talk about a couple – cucumbers – there are burpless, regular and canning cucumbers – whichever you choose, you’re going to get more of the vegetable’s nutrients in the skin – With skin on cucumbers provide potassium, vitamin K and magnesium – which support good health. But some people don’t like the bitter taste of the cucumber skin… in that case, don’t eat it.
