Why eat home canned/preserved foods?

Why bother with home canning and food preservation?  Nutrition and health education specialist Vera Massey with the University of Missouri Extension says those foods are good for you if preserved properly.  While there is going to be some nutrient loss, she says, by preserving the freshest of foods you’ll be preserving many nutrients.  There are very specific instructions for canning, she cautions, because “canning” is not “cooking.”
