Home canning is becoming more popular all the time but home canners need to pay attention to the rules about pumpkin. The USDA and the National Center for Home Canning say home canning is NOT recommended for pumpkin butter or any mashed or pureed pumpkin or winter squash.
The reason why is the home canner cannot assure that the center of the pumpkin butter or pumpkin puree will reach the minimum safe temperature to kill dangerous botulism causing bacteria.
