Why do hot dogs contain a preservative?

The National Hot Dog & Sausage Council’s Janet Riley says sodium nitrate is what makes a hot dog a hot dog. What’s more, she says it was cleared for safety by government tests a dozen years ago.  She says some hot dogs are made using celery powder, another form of sodium nitrite.
