Cargill settles E.coli suit

Cargill has settled a 2007 lawsuit where a Minnesota woman was left paralyzed by eating a hamburger contaminated with E.coli. Stephanie Smith has been paralyzed from the waist-down since eating the hamburger at a family get-together in the fall of 2007. Cargill recalled 845,000 pounds of ground beef patties made at its Butler, Wisconsin plant shortly after Smith and hundreds of others got sick from eating the meat.

Terms of the settlement have not been disclosed other than the fact Cargill will cover Smith’s care for the rest of her life. Smith had originally asked for $100,000 in compensatory damages plus payment of past and future medical bills.
