Total cheese production in the U.S. in November was 844 million pounds, 1.9 percent above November of 2008. The National Ag Statistics Service says Italian type cheese production was 6.5 percent above a year ago at 363 million pounds while American type output was 1.8 percent lower than last November at 332 million pounds.
Wisconsin’s total cheese production in November was 217.8 million pounds, up 4.3 percent from a year ago. The Badger State pumped out 7.1 percent more Italian type cheese totaling 102.5 million pounds, American production up 2.1 percent to 68.4 million pounds and Cheddar output was 2.2 percent higher than a year ago at 53 million pounds.
Total cheese production in California in November was 170.68 million pounds, a 2.2 percent decline compared to November of 2008. Italian cheese production in the Golden State increased 7.5 percent to 109.5 million pounds but American type output slid 14.4 percent to 47.8 million pounds. Cheddar production decreased 18.9 percent to 24.7 million pounds.

- Idaho; 67.27 million pounds, up 1.3%
- New York; 64.07 million pounds, up 1.7%
- New Mexico; 53.7 million pounds, up 8.4%
- Minnesota; 51.7 million pounds, down 3.5%
Butter production in the U.S. in November totaled 121 million pounds, down 9.7 percent from a year ago.

- Nonfat dry milk; 101 million pounds, down 24.7%
- Skim milk powder: 19 million pounds, up 15.4%
- Dry whey: 86 million pounds, down 0.5%
- Lactose; 61.8 million pounds, up 7.6%
- Whey protein concentrate: 34.4 million pounds, up 1.9%
- Regular ice cream; 53.8 million gallons, down 12.5%
- Low fat ice cream: 24 million gallons, up 10.3%
- Sherbet: 2.64 million gallons, down 23%
- Frozen yogurt: 4.05 million gallons, down 8.6%
